why do different matter with the same mass require different amount of heat in order to raise it's temperature for 1 degree? what are some influential factors that causes it's difference?

why is volume/ concentration a factor in how many particles reacted. why not only Mol? isn't what is being tracked is how many particles bond with other particles? about how many element/ion disappear in order to form compound?
