I also enjoy tofu dishes. But I usually go to the local Vietnamese joint to order it, or I mix it in a stir-fry.. I may have to try this one out however.. Sounds good. Queso 1 Quote

Mercedes Benzene Posted July 9, 2007 Report Posted July 9, 2007 Does anyone know how to make tofu firm (like restaurant style)no matter what I doI can never make it chewy and thick. I've seen it sold that way in stores. Do you have a Whole Foods where you live?A Grand Mart perhaps? Quote
Queso Posted July 9, 2007 Author Report Posted July 9, 2007 I bought firm tofu from whole foods. It still wasn't as chewy and firm as I'd like it, though. There must be a secret... Quote
InfiniteNow Posted July 10, 2007 Report Posted July 10, 2007 Could perhaps be as simple as removing it from the liquid and drying it on/with some paper towels for an hour or so before cooking? Quote
Edella Posted July 10, 2007 Report Posted July 10, 2007 Buy the firmest tofu you can find , wrap tightly in cheesecloth, place in a sturdy sieve , or tofu press box A total tofu kit for making homemade tofu and put something heavy and solid (10 lbs. or more) on the tofu for a few hours. Experiment with weights and time to get the desired firmness. I've made tofu press boxes out of bread pans with some holes drilled in it and bricks work nicely as weights. Or course the tofu will take the shape of your box and weights. Good luck! Quote
