I want to experiment more with pumpkins, as food, this year.Do any hypographers have any recipes (not only limited to pumpkins)that you'd like to share? Quote

Don't forget to cook those pumkin seeds. :hihi: I plan to cook some fresh cream of Acorn squash soup today as I have still 6 or so squash from my garden. *Cut squash in half & scoop out & save the seeds for baking.*Place squash halves in microwave-safe covered dish & cook on high ~10 minutes.*Scoop out cooked squash into blender or other mixing bowl and add half as much again of half-n-half, milk, or milk substitute.*Blend well*Put mixture in pan and heat to simmering on stove while stirring. Don't burn it! *Season to suit & consume.* :) *Edit addendum: I seasoned yesterday's batch with a teaspoon of honey, a teaspoon of butter, a pinch of salt, and a double sprinkle of cinnamon. Quote
Pyrotex Posted October 22, 2007 Report Posted October 22, 2007 Little Apple Birdies (my favorite Fall dish) Take two Cornish Game Hens, and remove anything stuffed in their body cavities, like livers. :hyper: Get a bag of dried apple slices and a cheap bottle of white wine, like semi-sweet Riesling, Chablis or a Bergerac. Cut apples with scissors into pea or bean sized pieces and soak in wine for two hours. Drain. Stuff birdies with a pat of butter, a clove of garlic and the apples. Put in baking dish, covered, bake at 350 for an hour to 1.25 hours. Serve hot with fresh rye bread and a spinach salad. Polish off the rest of the wine. Yum!!!! Queso 1 Quote
yellow Posted October 25, 2007 Report Posted October 25, 2007 one of my favorite memories.when orchards are close by, or good apples abundanthome made applesauce is incomparable to anything else. 3-4 lbs of apples, sweet onescouple cinnamon sticksjuice of one lemon, and some lemon peelsbrown sugar to taste, about 1/4-1/2 cup 1. clean and chop apples2. put everything in a big pot with about an inch of water or store bought apple juice in the bottom. simmer about 20-30min3. remove and sieve the apples. many ways of doing this, food processor, a food mill, potato masher or just a colander. for small batches a masher is fine :)spread the love:) Quote
