Dog excrement is normally turned dark by a hemoglobin byproduct filtered in the liver. With liver problems dog feces could be consistently white. Dog feces can also be turned white by the environment especially if the diet is rich in bone meal.

Now this does seem like the correct answer as the old dog creating the dog mess has diabetes, which while it is centred on the pancreas, I assume will affect the liver and certainly does the kidneys/ bladder system. It has also been put on a high protein diet recently as well because of bladder stones, so bone meal quite prevalent. Ta!
