Need Help To Prepare Diastereomer-Amino Acid

Hello,

 

Can anyone suggest me which reaction I can use to prepare diastereomer of amino acid (Tryptophan, Lysine and glutamic acid) so that enantiomer excess can be calculated using NMR?
