Just wanting to know how electricity "knows how to flow" or where, In a basic portable solar panel setup with a charge controller and load device like a fridge both connected directly to the battery terminals. 

When the fridge is operating does it get powered by the batteries supply solely or the power coming through the charge controller solely? Assuming full sunlight. 

 

If the latter how does the energy bypass going into the battery?

 

I have a feeling it's to do with resistance & voltage but not sure please help thanks.

I am afraid I am not familiar with things. I would need to see a circuit diagram.

It may be that the controller is a computer circuit that is programmed to control where the current flows.
