Buffy Posted August 10, 2005 Report Posted August 10, 2005 Oh dang. Its my fault. I mention avocados the guacamole.... I'm hungry! Okay! Post your favorite recipes here for "comfort food", which to me you can make even when you have no need for comfort, but it does imply that its probably not good for you in "mass quantities"... Here's one to extend the current ingredient theme: Toast slices of bread.Put very thin layer of mayo on themSlice avocados and layer them to taste on the toastOnion powder, salt and pepper to taste.Preheat broiler to 400 degrees.Spread grated cheeses over the 'cados.Sprinkle cayenne pepper on top of cheese to taste.Place in broiler just long enough for the cheese to bubble but not cook the 'cados.Yank out quickly and serve with Margarita or Daquiri. Simple, easy and nummy! Allez Cuisine!Buffy Quote
infamous Posted August 10, 2005 Report Posted August 10, 2005 When it comes to comfort food, my favorite would have to be Taco Salad. One pound of browned hamurger seasoned with a good Taco seasoningTotilla chips, crumbled up of course and spread out on the platePlace a large portion of browned hamburger on top of tortilla chipsAdd: Diced lettuce Diced tomatoes Chopped onion Guacamole Refried beans Sour cream Very sharp chedder cheese Chopped Jalapeno peppersPile ingredients as high on your plate as physics will allow and cover with a liberal dose of very hot Salsa. I could just eat myself sick on this stuff. Quote

nkt Posted August 10, 2005 Report Posted August 10, 2005 When it comes to comfort food, my favorite would have to be Taco Salad.Mr. Giant Taco Salad Inventor, we salute you!I could just eat myself sick on this stuff.Heart attack? Weight problems? As Buffy says, as an occassional treat... As for the strawberries and cream idea, if you have raspberries, try a shot of Aftershock whisked in with the cream. It might work with the strawberries, too. Quote
infamous Posted August 10, 2005 Report Posted August 10, 2005 Mr. Giant Taco Salad Inventor, we salute you!Heart attack? Weight problems?.Actually nkt, I'm not having any problem with my weight or my health. Rather lean and mean I must say. Bench press: 325 lbs, and I'm almost 63 years old. I owe it all to massive doses of Taco Salad. Quote
Buffy Posted August 10, 2005 Author Report Posted August 10, 2005 As for the strawberries and cream idea, if you have raspberries, try a shot of Aftershock whisked in with the cream. It might work with the strawberries, too.Careful, that's *sour* cream, not whipped/whipping cream: sour cream can do weird things when you mix it with certain alcoholic substances...but I guess we could move that topic to the chemistry forum (although I argue that all cooking is chemistry!). Also, I've substituted raspberries in this recipe and although I actually prefer them to strawberries, their tartness does not work as well with the sour cream.... Creamily,Buffy Quote
pgrmdave Posted August 10, 2005 Report Posted August 10, 2005 Toast (white bread)Peanut butterhoney mix the peanut butter and honey on the toast (don't use too much honey, or it will run all over the place) One of my favorites - it's quick, tasty, and has peanut butter :Alien: Quote
Buffy Posted August 10, 2005 Author Report Posted August 10, 2005 Curry Dip w/Veggies (looks healthy but really ain't): 1 cup mayo1 tblsp curry powder1/2 tsp onion powder Mix ingredients well in bowl, adjusting spices to taste (I go a little heavier on the curry than most). Sprinkle Cayenne pepper on top after mixing and garnish with parsley. Surround bowl with veggies of choice (I like fresh broccoli, cauliflower, radishes and carrots). Dip n' scarf with a nice Cabernet or Chardonnay as fancy strikes. Chow,Buffy Quote

But rest assured, as soon as I can purchase some, I'm gonna try this recipe. Sounds absolutely scrummmmmcious. Quote
Buffy Posted August 12, 2005 Author Report Posted August 12, 2005 A little more complicated, but obscenely good. Recipe watched live at one of my favorite restaurants that's impossible to find: Bananas Fosters Best done over a gas stove, but otherwise have a match handy Slice several bananas thicklyHeat a medium skillet (large if you've got 8 mouths to feed Irish) Dump in a couple of tblsp of butter and get just to melted, not bubblingDump in half cup of brown sugar--more or less depending on quantity of bananassprinkle on dash of cinnamonSaute for a minute or soDump on some Grand Marnier and light it Flambe for another minute until the alcohol is burned off.Dump the result over French Vanilla ice cream.Eat instantaneously with some Grand Marnier on the side! Enjoy! Cheers,Buffy Quote
Turtle Posted August 12, 2005 Report Posted August 12, 2005 On a small plate combine: 1 - large ripped heel of Italian bread 1 - large chunk of stinky cheese (Dubliner Irish is my latest fave) 1 - apple cored & slicedServe with: 1 - liter of dark beer or an Oregon Pinot Noir Quote
Buffy Posted August 12, 2005 Author Report Posted August 12, 2005 Tuna Burgers: English muffin halves: toast them first.Tuna salad (see following post): slather it on top of the muffins and broil til hot.Add your favorite cheese on top (mine's swiss) and broil til it bubbles.Hot freaks: sprinkle cayenne powder on top of cheese before last step. (Getting the theme here?) Serve n' eat with a tall cool one. Cheers,Buffy Quote
Buffy Posted August 12, 2005 Author Report Posted August 12, 2005 Tuna Salad: Everyone makes tuna salad differently. Basic ingredients most people use are: Mayoonions (usually green, which I personally hate)celery (its okay, but its bland and mostly used as "filler") Its hard to go wrong with tuna salad, but I like to experiment with it a LOT, so here's a laundry list of the things Buffy recommends for your tuna salad for whatever recipe you use it in: Mustards: all kinds, brown chinese, russian hot, grey pupon, german, etc, etc, etc.Horseradish: mmmmm!wasabi: If you've got a Trader Joe's check out their Wasabi Mayonnaise, its GOOD!Hot sauce: any kind, green on up to the habanero bases....sprinkle with cayenne! For the daring: crushed red pepper...or that chinese chile oil...Fresh crushed garlic: but make sure you boy/girlfriend has some too if you expect to do any kissing afterward.Pickle relish: lots of people use it but with the above stuff its actually *really* good!Worcestershire Sauce! Really!Teriyaki sauce!Hoisin sauce! Sweeet!Chopped fresh cabbage: a real twist for those that like that veggie filler.Chopped radishes: much tastier than celery...Seeds/nuts/etc.: sesame! walnuts! fried wontons (put in at the end and don't let them sit though: they get soggy!) If you're from the midwest, you get dispensation to use Miracle Whip, but don't try to give me any. Cheers,Buffy Quote
IrishEyes Posted August 12, 2005 Report Posted August 12, 2005 Tuna Salad:Its hard to go wrong with tuna salad, but I like to experiment with it a LOTSounds very familiar. If you ask my kids, Tuna Salad has no recipe, just whatever we have on hand. It never tastes the same twice, but it's always delicious! I love putting in garlic. I have also added Ranch dressing instead of mayo, very creamy that way. Pickles, of course. Boiled eggs are a must. We've tried it with apples, but have discovered that different varieties work better than others - the texture makes it good or not as good. Dijon mustard is awesome!Celery salt works better than celery, I think. And we love to make tuna melts, on toasted onion rolls, with mozzarella cheese, and a few slices of jalapenos. Wow! Talk about comfort!!! Of oucrse, i really prefer mine with no bread but lots of Club crackers. Ritz will do in a pinch, or TownHouse if niether of the other is available. Quote

Turtle Posted August 13, 2005 Report Posted August 13, 2005 Fresh Blackberry Tarts ___First, with can & stick in hand, stumble down any suitably steep blackberry briared hill. Note: Untested recipe; check back in 3 hours :ud: :) Update: Baking time above is mostly suited to an oven fire; bake until golden brown , about 20 - 25 minutes. Recipe tested acceptable. Quote
